Think outside the box this Valentine’s Day by making Cake Mix Cookies, a charming way to bring a little extra love to your sweethearts. With just three ingredients – your favorite cake mix, eggs and vegetable oil – you can whip up a batch of soft, chewy cookies in minutes. The simplicity makes them perfect for baking with kids, turning the kitchen into a fun, hands-on celebration of the holiday.
One of the best parts is how versatile they are. Choose any cake mix flavor to match your mood: classic chocolate, festive strawberry, or even red velvet for a romantic touch. Stir in chocolate chips, sprinkles, or festive candies to personalize each batch. For an extra sweet finish, press a chocolate kiss or a gooey caramel into the center of each warm cookie.
These cookies are quick, customizable, and guaranteed to spread Valentine cheer.

Instructions
Heat oven to 350 F. To a large bowl, add the cake mix, eggs and oil. Stir to combine until the dough is smooth. Fold the chips into the dough if using. Refrigerate the dough for 30 minutes. This step will make the dough easier to work with.
Using a medium size cookie scoop, place dough on parchment paper lined baking sheets about two inches apart.

Bake cookies for 9-11 minutes until they are set. Do not overbake cookies – they should be on the softer side.
Remove cookies from the oven and press toppers in the center of the cookies if using.
Allow cookies to firm up for a couple of minutes before moving them to cooling racks.
