Grilling season is officially here, and there’s no better way to celebrate than with the bold, fresh flavor of a great marinade. Marinades are where spices, aromatics, and herbs come together to create layers of flavor that soak into every bite. Fresh herbs snipped straight from the garden, such as rosemary, thyme, parsley, and basil, bring brightness and fragrance, while spices add warmth and depth. Whether you are preparing juicy chicken, hearty cuts of beef, or colorful vegetables, the right marinade can transform everyday ingredients into something memorable on the picnic table.

Four Marinades to Try This Season


Recipes are based on 2 pounds chicken, beef or vegetables.

Lemon Herb Marinade: Bright and classic, this blend of olive oil, lemon juice, garlic, rosemary, thyme, and parsley is perfect for chicken breasts, thighs, or zucchini and summer squash.

¼ cup olive oil
¼ cup fresh lemon juice
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
2 tablespoons fresh parsley, chopped
1 teaspoon salt
½ teaspoon freshly ground black pepper

Balsamic Garlic Marinade: A savory mix of balsamic vinegar, olive oil, whole grain mustard, garlic and black pepper gives chicken, beef, or portobello mushrooms and onions a rich, tangy depth.

¼ cup balsamic vinegar
1 tablespoon olive oil
1 small onion, diced
1-2 cloves garlic, minced
1 tablespoon dried oregano
½ teaspoon dried rosemary
2 teaspoons whole grain mustard
Salt and freshly ground black pepper to taste

Citrus Lime Fajita Marinade: A bright, flavorful blend of fresh lime juice, olive oil, and garlic with a touch of honey provides a subtle sweetness. The addition of chili powder and cumin add warmth and smoky spice, bringing everything together for a classic fajita flavor.

Juice from 3 limes
1 tablespoon olive oil
1 tablespoon honey
2 teaspoons chili powder
1 teaspoon cumin
1-2 cloves garlic, minced
½ teaspoon salt
Freshly ground black pepper to taste

Sweet Ginger Soy Marinade: A sweet and savory blend of soy sauce and brown sugar with fresh ginger and garlic gives chicken a fresh, balanced flavor.

½ cup light soy sauce
¼ cup brown sugar
2 tablespoons vegetable oil
1 teaspoon fresh ginger, grated
1-2 cloves garlic, minced
¼ teaspoon freshly ground black pepper
